Hello!
Two quick questions.
Where can I find, in the phyphox-app, a version number of my current installation of the app?
And, are there any plans for the 1.1.0 version to be available via f-droid?

You could find the current version number by tapping (i) in the main menu and selecting “device info”.

We have submitted our source to f-droid at the same time like everything else. There has apparently been a successful build last night, so the current release could be available any time soon.
